Dr. Emhoff is interested in the role of physical activity in the prevention of chronic diseases from the standpoint of energy metabolism. Her research focuses on whole-body adaptations related to carbohydrate storage and utilization that come with endurance training, particularly in female athletes. Her research work has been published in numerous journals, including the Journal of Applied Physiology, Frontiers, and Nutrients. She is passionate about education and strives to integrate active learning and diverse perspectives into her courses. Dr. Emhoff volunteers as a mentor on Engineer Girl, a nationally prominent website encouraging young women to pursue science and engineering. During her free time, Dr. Emhoff enjoys traveling and pursuing epic outdoor adventures with family and friends, which often involve a combination of running, cycling, mountain biking, swimming, snorkeling, hiking, surfing, paddleboarding, and rock climbing.
